CAll to recipes

can you post the pigs in a nest recipe? and the chicken enchilada goodness? My family loved both-so I would like to do it again!

Sorry it's taken me a while to get to posting these. Mostly, I have been slacking because I don't really have a concrete recipe for either one. I made up the chicken enchilada one, so I'll try the best I can.

Pigs in a Nest:
Cooked Rice
ground beef
cheese
tomato sauce
parsley
garlic
salt and pepper
onion powder or flakes

Mix everything except the cheese and tomato sauce. (Make sure rice is cooked, and ground beef is raw.) Form into balls. Pour tomato sauce and cheese over the top. Cook about 30 min. at 350 or until ground beef is cooked all the way through. You can also microwave it for about 15 minutes.

Chicken Enchilada Goodness:
(Okay, this one I totally made up, so it won't be very exact.)

shredded cooked chicken
cream cheese
chicken broth
cream of chicken soup
salsa
cheddar cheese
flour tortillas

Mix all six of the first ingredients in a bowl. Rip up little pieces of flour tortillas and layer on the bottom of a casserole dish. Pour mixture on top. Add another layer of ripped tortilla pieces. Add another layer of mixture. Top with a layer of tortilla pieces and cheese. Bake at 350 until it's hot. :)
